Southwestern Soup

Okay, well the posting of how great I am eating did not go so well. I was a little embarrassed that I posted then immediately ate 6 jalapeno poppers! Here is what I had for breakfast.

Southwestern Soup

1 onion chopped roughly
1/2 cup of corn
1 stalk of celery roughly chopped
1/4 cup olive oil
1/4 t. fresh ground black pepper
1.5 t. sea salt
1.5 cups left over chicken or turkey
dash of liquid smoke (I actually used turkey breast I smoked so did not use this)
1 piece of left over cooked bacon or 1/4 cup real bacon bits or chips
2 T. flour or Wondra
4 cups of low fat milk
1/3 cup jarred salsa
1/2 cup fresh cilantro leaves
crushed tortilla chips and sliced avocado for garnish

This recipe is incredibly flexible so don't stress over the quantities, it will all work out. Saute onion, corn and celery in the olive oil. Add spices and flour. Saute until blond. Slowly add milk while stirring. Bring to a boil. Add all other ingredients. Blend with immersion blender. Add additional milk to the consistency you like. Taste for salt and pepper. Serve with crushed chips and sliced avocado if you would like.
